Ingredients
- 30g coriander (reserve a few sprigs for garnish)
- 10 dashes Tabasco Mild Green Hot Pepper Sauce
- Juice and zest of 1 lime
- 40ml olive oil
- Pinch of salt
- 200g Sicilian cherry vine-ripened tomatoes (quartered)
- Manchego Curada cheese (for shaving on top)
Method
- Blitz the coriander, Tabasco, lime juice and zest, olive oil, and salt until almost smooth to make the piso.
- Place the quartered tomatoes into a mixing bowl and pour over the piso. Toss to coat.
- Leave to sit for 5–10 minutes.
- Transfer to a serving dish.
- Top with shavings of Manchego Curada and garnish with reserved coriander sprigs.
