Tomato Salad with Green Chilli Piso and Manchego

Ingredients

  • 30g coriander (reserve a few sprigs for garnish)
  • 10 dashes Tabasco Mild Green Hot Pepper Sauce
  • Juice and zest of 1 lime
  • 40ml olive oil
  • Pinch of salt
  • 200g Sicilian cherry vine-ripened tomatoes (quartered)
  • Manchego Curada cheese (for shaving on top)

Method

  1. Blitz the coriander, Tabasco, lime juice and zest, olive oil, and salt until almost smooth to make the piso.
  2. Place the quartered tomatoes into a mixing bowl and pour over the piso. Toss to coat.
  3. Leave to sit for 5–10 minutes.
  4. Transfer to a serving dish.
  5. Top with shavings of Manchego Curada and garnish with reserved coriander sprigs.
