Watermelon and Cherry Salad with Feta and Za’atar 🫒

Sweet, salty and refreshing with a subtle earthy note, this is summer on a plate.

Ingredients

  • 600g cubed Watermelon
  • 200g halved and pitted Cherries
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tbsp Pomegranate Molasses
  • A pinch ofZa’atar and sea salt
  • 150g Greek Feta Cubes
  • A handful of shredded Mint leaves

Method

  1. On a platter, combine the cubed watermelon and cherries.
  2. Drizzle with olive oil and pomegranate molasses.
  3. Sprinkle over za’atar and sea salt.
  4. Scatter feta cubes and finish with shredded mint leaves.
  5. Serve with warmed Greek Style Flatbreads (or gluten-free equivalent).
