Spicy and rich, it was love at first taste when we launched these kits from Mexican restaurant Wahaca.

Ingredients
- 1 × Wahaca Tomato & Smoky Chipotle Soft Taco Kit (contains 10 tortillas. Add extra Wahaca tortillas if hungry)
- 2 × 260g Cod Loin (or haddock or monkfish)
- 1 × 227g Organic Low Fat Soured Cream
- 2 limes
- ½ tbsp olive oil
- ½ iceberg lettuce, shredded
- 2 jalapeños, thinly sliced
- Coriander leaves (optional)
Method
- Open the Wahaca kit and pour the marinade in a shallow dish. Add the fish and coat it well. Leave for 15 mins.
- Decant the kit’s salsa into a bowl. Spoon the sour cream into another and mix in the zest and juice of 1 lime.
- Heat the oil on high in a large frying pan. Add the fish and cook for 2 mins each side (turn carefully and leave alone while cooking). Remove from the pan and allow to rest for 3–4 mins.
- Heat the tacos in the microwave or individually in a dry frying pan, as per packet instructions.
- Serve the warmed tacos alongside the flaked fish, salsa, lime sour cream, shredded lettuce and jalapeños for extra heat and crunch. A little fresh coriander is also a really nice addition to the fish tacos!
